Default Temp guage is tripping. Why

Not too long ago I noticed my temp gauge pegged out and I panicked a bit. Thing is my Pro Flo EFI tablet says the temp is 195* and car does not appear to be overheating. I swapped out the sending unit, fired it up and noticed once the car starts to warm up, my gauge slowly climbs until it's pegged, yet the computer still shows all is well. Any ideas? Bad ground on printed circuit? Doubt it? Temp sender wire on header - didn't seem to be?

I do have a new set of Dakota Digital Gauges I plan on installing soon, hopefully the problem doesn't follow.

Ideas?

Is the alternator putting out the proper voltage?

According to my Pro Flo 4 tablet app it is. I will double check with a meter but I don't suspect it to be off.
