Default newb question

WHile instaling my headers on my 74 FB I ran into a few questions;
1. I have gaskets and a metal gasket, one from my gasket kit, pone came with the headers, do they both go on, oe just one, and if one which is better?

2. On the passenger side, does the dipstick tube rest on the engine side or the fender side of the flange, I am guessing the fender side, but jst wanted to confirm

You use the gaskets that came with the headers. The one in the 'gasket kit' is a steel shim for factory manifolds.

It's been a few years on the dipstick question but I believe you are correct with fender side of flange. It should be self evident when you put them on and try to tighten them up. If my memory serves it'll pinch between the flange and engine if you have it on the engine side.
