Default Header gasket installation direction

I am about to install a set of Percy's header gaskets and I was wondering what direction they they should face. Seeing as the stamping process makes one side concave and the other convex, which one should face the head and which side should face the header? I will be using high temperature copper silicone.

It really should not matter but for if the gasket has a big cut out to get by the dip stick tube maybe?

I always installed the boss towards the manifold, flat side to the head.

Yeah, I was thinking flat side towards the head also. My headers are separated, so I was just going to cut the flanges out separately.
