Great information! I’m new to pontiac engines so please bear with me.
I just recently bought a late 55 GMC that has the 316 Pontiac and hydramatic transmission.
I’d like to swap the engine out for a 389 and rebuild it for maximum torque and towing not all out hp. I’d also like to convert to multiport efi with a 4v throttle body for better reliability and economy. I also want to add power steering and brakes to make it more enjoyable to drive regularly and especially when towing a trailer. I’ve found a 60 389 that has the correct bell housing pattern to work with my trans.
In your experience, what do you all recommend for building that motor for my goals?
I’d really like to keep the truck as period correct as I can so that it can easily be restored to original later on. Otherwise I would swap in the 6.2 Escalade engine and 4l80 I have stashed away.
That 389 sure would look good in my old truck painted gmc crimson red with chrome valve covers and a big chrome air cleaner! TIA

Looking as you say for better reliability from the electronics made in China that are part of a FI system will disappoint you sooner or later and if your lucky maybe get you home in limp mode at 10mph!

"Maximum torque for towing"- I suggest a 455. And bite the bullet and replace the old HydraMatic with something more modern (and serviceable).
