deck and milling head unknown
? gasket thickness to get about 11.1 ?

Here's the only answer that anyone can give you without YOU providing the rest of the needed details.

With a piston at TDC you need a total of 83.3 CCs to achieve a 11 to 1 compression ratio.

The other thing that's certain is that 13.5 cc dome needs to go since I don't think you be wanting to grind / machine that 13.5 CCs into the chamber even if it could be done.
