I am going to get a new driveshaft. I would like to know what are my options and what should I "beware" of?
What about yoke sizes? Universal joint types/brands?
What are the variables that I should make sure I specify?

The answer is very dependant on what parts are in your drivetrain (auto or manual tranny), how much your car weighs and how much power your motor makes. If you just want a completely bulletproof shaft get a billet trans yoke (Marc Williams, Strange, etc), use 1350 U-joints, billet weld ends and a Chrome moly tube. You will also want to use a billet pinion yoke. Its pretty easy to dump 500 bucks in a driveshaft using the above parts, but you wont need another one for a very long time.

I agree with Tom, I originally went the "in-between route" it cost about $250 and broke it, and took the trans with it. It was a false economic move as it cost a lot more the second time around and believe me, you DO NOT want to experience the drive shaft letting loose going through the lights.
