run which ever you like!!!!
I choose to run a 170 NOS delco currently, runs right at 170-175.
my cooling system with cold case is so good with a 160 Superstat it would run 155 anytime
temp was below 70. Heck I may become a guy who swaps stat from winter and summer!!!!

and always chk opening temp in hot water before install.

My stuff does the same when ambient temps are reasonable. We just drove both cars round trip 230 miles last weekend and on the highway mine was running 158 and dad's running 162. When I did slower speeds off the highway I was at 155 (crack open temp for the 160 stat). High ambient temp that day was only 65 degrees. Mine makes 608hp and dad's makes 724 hp. Pretty happy with that considering when summer is here and temps reach 110, the cars will generally run to about 175 and stay there. The thermostats are fully open at 163 (gotta test this stuff on the bench )

When you push the pump gas envelope with these engines, and then run nothing but 91 octane cat pea with 10% or more ethanol making this kind of power, then drive them 150 miles away from home, I tend to lean towards liking the cooler temps better, especially in Arizona where most people struggle badly to keep their classics cool.
Even our daily drivers are the same way, although not making that kind of HP, they still push the pump gas limits, and I have to depend on them day in and day out to run reliably without any gas related issues from heat and the like.
But many people these days don't rely on their classics for transportation so their thought process on that deal would be drastically different and the little idiosyncrasies that come with that aren't as much of a concern.

As far as gas mileage is concerned, they all are very respectable and not affected by temps at all. Dad's 571 Pontiac gets 15.8 mpg, my Formula gets 17mpg, my Chevelle also gets 15.8 mpg, my Z gets 21 mpg, and I don't have these things running super lean either, they run down the road in the 13 AFR range.

Run what ya like and experiment with it

Larry - do you change closed loop setting in Sniper with the 160 stat?

Yes, I have it start learning at 140 degrees.

I picked 140 because many times at the dragstrip if there is time, I like to see the pass started with engine temps at 140-150 degrees (where they run the quickest) and I like to see the learn and correction at those temps so I can tune accordingly.

Holly seems to set the learn feature on these things 20 degrees below the projected stat rating. I guess they assume most will run a 180 stat and the stock tune starts learn at 160.

I dont drive classic cars in dead of winter anymore but when i did i enjoyed the 195 over the 160 when it was below freezing out, very easy to notice the difference

At spring time i would swap back to 160
