Electric water temp sensors ???
Are all temp sensors the same?? I potentially will have three different sensors. EFI, temp gauge, and fan controller. So my basic question is will one of these be able to control all three items?? Hope this makes sense.

No. Most commonly are GM calibrated/scaled ones. You cannot tie three outputs to a single sensor wire without distorting the calibration of that sensor.
I have one temp sensor going to the EFI then use the EFI to run an idiot light for the temperature (on below 130ºF, and on again above 205ºF, off in between, even use the stock TEMP light on my Firebird) and likewise use the EFI to control when the fan comes on.

Get a PWM fan controller from DC Control and you won't need a sending unit for it.

May have to look at the DC controller.
But to clarify things a bit. My EFI would be a FITech, Auto Meter water temp gauge, and a Derale fan controller.

The FItech might do fan control. You're going to need a second sensor installed for the gauge.

Well I may have found a partial solution. I discovered that there is a new version of the gauges I was going to use that has warning/idiot lights built in. So that eliminates the stock temp sensor.
