10.5 v 11" clutch
Can you bolt an 11" clutch to a std flywheel that ran a 10 1/2" ? Is it neccesary to run the bigger clutch on a, say, 500hp/500tq motor?

It depends on the flywheel. You can't do it on a stock flywheel. However, at that HP level you will be fine with a good 10.5".
