At one point I had wanted to go touch screen video/audio because my dash was a mess, and would need fab'ing to make it worthwhile. Since I found a good dash, I will stick with a stock look, and go with a modern bluetooth media player. I'm thinking a pair of 6x9's in back, 6's in the kick panels, and a single sub (probably a 10, maybe a 12).
I have a learning curve to catch up with on stereo stuff.
