For the track ? I would first try he 4.11s. You're making a lot of power there with a lot of torque. A higher-numerical gear may be too much.

Correct. Don't remove a header bolt all the way. Loosen one, loosen another, then another, etc and repeat until the header flange is clear of the cylinder head.
