This particular engine, in his "stage 3 super pace car" does have something wrong with that type of tune... it detonates at part throttle & 6psi of boost so bad that it requires 3-4 bottles of octane...

The XE268 in my .030 400 with milled 6x-4 heads (~9:1) has ran flawlessly for 15+ years, it runs mid 13's at 103+mph taking it easy...

Most exhaust shops work on modern vehicles... they wont know what is quiet on a 500hp stroker engine. Guys on a forum that own or build these engines will have more experience than the average shop...
