Have you tried decreasing the high speed air bleeds? I have no idea how much (or little) can be gained there or if it's super relative... Maybe get some comparable data from those that have one...

The dominators I've used (on gasoline) have had excellent response with the 1:1 set up. I think the booster design is responsible for the very good response, but I'm no expert.

If you do a little math you can do the test in a gallon jug. 125/60=2.08 gpm. Probably have to measure it in 15 second interval to keep it in a 1 gallon container.

I think if you can keep the #8 line full under all conditions, it should be enough. Maybe pull the lines off the carb and do a flow check post regulator? See if the results make sense for 100gph...

Here's the pump curve. Looks like ~100 @ 6.5-7psi, then falls off a cliff... I think that could end up marginal under hard acceleration, but I'm no expert...

80 gph @ 7psi should support it on a Dyno anyway. Gravity forces, line friction etc will probably drive requirement higher. It would be nice to see the actual pump curve for that pump.

I don't see the flow number vs pressure. If it had 125 gph @ your running pressure it might be enough. If it's 125gph at wide open flow (no pressure) I'd think it's iffy...

Is the 125 number the gph? If so I'd think that may be small. Add 30% to what you'd want on gasoline and that's a good starting point.
