I just wanted to let you know (as well as anyone interested in this) that I agree with the 1973 model year for this bumper.
That rust to me looks like small fries.

I would think that a "Gardner stock-type exhaust" shouldn't hold you back;
Look at pure stock drags and such - I have understood that many of those people are running a Gardner exhaust.

None had the EUN listed.
Maybe you have some inside knowledge which might permit me to confirm this?

iirc the 1970-#11 heads were a little lower compression than 1968-#17.
According to wallace racing (http://wallaceracing.com/head1.htm), the 1968 350 was 9.2:1 compression and the 1970 350 was 8.8:1...

The 1973+ air cleaners have increased clearance for the attached choke - so this setup (if I am interpreting you correctly) sits even more proud of the fuel bowl than an OE...

Although they cook them in refined peanut oil, but if you didn't realize it, 'Five Guy's' does a multi-step cook;
they blanch ("cook" in water);
then they pre-cook;
