I used SEM texture coating to restore some very large plastic panels on the sides of an 88 Mustang hatchback area.

The key will be getting your pieces to be rigidly connected so as to avoid cracks in your top surface. In addition to rivets, you may want to spread some epoxy across a wider bonding surface to avoid the possibility of the connected parts hinging around the rivets. Once it's all good and stiff, fill and smooth the u-pol. Then I would spray the entire panel with a good primer filler with some flex additive in it. Sand it smooth, then apply the SEM texture coating so it's going over a uniform smooth surface. Then do the final coloring of the panel with whatever interior dye you are using.

You can make it look great, but it's a lot of work....
